Well my self-administered reverse psychology Seems to have worked: we're sitting here at the brewpub enjoying it. Yeah, it's not really hoppy, nor is it particularly distinctive, but it is flavourful. It's top-fermented, which in Steinbach's one-track mind means hefeweizen yeast, but with 90% barley 10% Dinkel, it ain't a Weizenbier, and this time, the hefe notes are mercifully mild. There is some bitterness, but only in the aftertaste, nothing up front like the kind that bitter hopping provides. Astringency, in other words. No, not hoppy, but oddly drinkable anyway, like about half of their rotating beers are. Triple the hopping rate at 15 and 5 minutes before flame-out and then it would be worth the name. |
