Perhaps the greatest thing to have happened in the interim 15 years since my previous homebrewing life and my new current one is the appearance of high quality dry yeasts. I used to use the expensive, labour-intensive liquid yeasts back in the old days, which yielded great results, but were like adding 25% more work. The new ones though, you buy an 11gm package for 2€, keep it cold, proof it in warm water, and pitch it into your wort. The Nottingham strain is espcially nice for dry ales--I get my 1.030-1.035 OG wort down to 1.004 or 1.005 in 3-5 days. It's quick, hungry, and drops *bright*. It's all I use, and I normally re-use the yeast sediment from one batch to the next. |
