Whats the top 10 these days...breweries outside Bamberg??

I've decided to head to Germany at the end of November for 10 days. This will most likely be my last trip for an extended period for travel to Europe. The dollar is going to need to correct somewhat before I head over again after this trip. So, I'm really looking to seek out some gems and pass on the stinkers. I'll have a car(I always do and I'm not drinking heavily). I would like to visit very active breweries to observe operations if at all possible. Mainly though I want to enjoy good Kellerbier. I'll be based in and around Bamberg for about 7 days. Thanks! ToddA
