Last trip to Oberfranken

I am suddenly being transfered from Berlin to Brussels at the beginning of August. Another great region for beer, but I prefer Oberfranken. I have a three day window to return to my favorite region of Germany before my departure and am thinking of combining on each day a lunch at a brauereigasthof followed by a hike to one or more keller (my wife is not such a long distance hiker). I will stay in or near Bamberg, but am not interested in Bamberger breweries, since I know them very well. Here are my initial thoughts: Day One: Lunch in Ebing or Bischberg, followed by a hike to the northern Kreuzberg, visiting the two Kellers in Oberhaid, Dillerkeller near Doerfleins, and/or Wagnerkeller near Kemmern (more than one is okay, I am also thinking of hiking out to Weiher). Day Two: Hiking to the better-known Oberfrankenen Kreuzberg, plus Stiebarlimbach, with lunch at a brewery in Forchheim (Hebendanz?) Day Three: Lunch in Aufsess, with a hike to Heckenhof, Hochstahl and Sachsendorf. My Kirchweihkalendar notes Kirchweihen in Heiligenstadt and Drosendorf, which might have beer interest. Would appreciate any suggestions of how one of these days might be better spent (or how my plan might be faulty). I am not adverse to going to the Steigerwald. I would add that my wife does not like places filled only with "sauer" drinking men despite the quality of the beer (most recent example - Mager in Pottenstein). We have often visit Hummel in Merkendorf Schwanenbraeu in Ebermannstadt so am not interested in returning there. Thanks in advance for any advice.
