My Franconia/Germany Itinerary

Assuming the current truce between DB and its unions continue, here is my tentative itinerary. Feel free to make any suggestions. I arrived in Frankfurt on Thursday, December 6 and take the train to Bamberg arriving early afternoon. I have been to Bamberg twice for about seven days total so I plan to use it as a base for day trips. Since I will be traveling on a rail pass I plan on going to Buttenheim for the afternoon/early evening. Since I will have just arrived, I expect to make it an early evening. My question is, will the taverns in Buttenheim be closed because it is St. Nicholas Day? Friday I plan to stay in Bamberg and head to Mahrs for 5 p.m. kellerbier and then wherever. Saturday I am planning to go to Coburg to see the Schloss and Christmas market. I will stop in the tavern in Coburg even if it is a contract brewery but then on my way back to Bamberg I think I will stop at Breitengüssbach and possibly Ebing, but that might be too complicated with limited train service to Ebing. Breitengüssbach seems to have trains every hour returning to Bamberg. Sunday I'm thinking about a trip to Nürnberg. I've been there a couple times but I have never visited the Albrecht Durer house or the Documentzentrum. I will probably also stop at the Landbierparadeis tavern. I know there is one not too far from the train station (I've been there) but I'm under the impression there is one by the Documentzentrum... or is that the same neighborhood? I still have some research to do. Monday, I will spend partly in Bamberg and I'm also thinking of trying to do Fred's recommended Memmelsdorf/Merkendorf bus pub crawl. Tuesday I depart for Mainz. There is at least one brewery as well as the Dom and Gutenberg Museum. On Wednesday I'm going to Freiberg and on Thursday Worms/Speyer... or vice versa...for breweries, Doms/Munsters and Christmas markets. On Friday I leave for Antwerp and eventually Essen and the Kerstbierfestival. Needless to say, I am completely dependent on trains and am still keeping an alternative strategy of arriving in Frankfurt and heading west and just staying in the Netherlands and Belgium since my rail pass covers Germany and Benelux. I really don't want to be stranded on one of my major travel days, particularly heading toward Antwerp. Feel free to make suggestions or warn me of potential problems and if anybody is anywhere near where I am going to be, let me know and perhaps we will be able to have a beers.
