I had a good time and things are definitely getting better, but I think the supply of places to drink a decent beer are exceeding the capacity of interesting beers. In other words, lots of new "good beer" places but they tend to have the same beers from the same breweries. The gap is being filled by cask English "imports" -- I had beers from Thornbridge and Black Iris (the Flowerpot Pub in Derby). I also broke my "Only Irish Beer from Irish Breweries" rule to have some bottles from New Zealand. I was in Dublin and Galway so things may be different elsewhere. Foodwise, the most interesting thing was "Black Pudding Wontons" -- fried Wontons filled with black pudding. Also interesting was a deep fried Haggis (at a fish and chips shop) and Wasabi Mushy Peas with my fish and chips. Oh, and lots of horsemeat jokes :) Lot's of vacant pubs -- we could combine all the threads and open our communal brewery/Gaststätte in Dublin and specialize in half-IPAs and equine cuisine.
