New beer recipe - what do you folks think?

As most of you know, I'm brewing beer for my beer and folk music festival each year. And I change the sort of beer annually. So - after a Spezial in the first two years and a Kellerpils last year I'm going for a dark Vollbier this year. I'd like to show you my creative output and have a couple of questions. By the way - I found it boring to use Munich malt for the dark beer and decided to change to Tennen malt:

Jürgens Dunkles Vollbier:

Hops: Bitter hops: Herkules (100 %); aroma hops: Spalter Select (40 %), Northern Brewer (60 %).

Malt: Bohemian Tennen (threshing floor) malt, Pilsen style (79 %); Caramünch II caramel malt (12 %); Carafa III roasted malt (7 %); sour malt (2 %).

Yeast: Not sure, yet. Probably Saflager W-34/70.

abv ca. 5,1 - 5,4 %; Stammwürze 12 %; 27 IBU.

Questions: Has anyone experiences with bohemian Tennen malt - how did it affect your beer (characteristics, palate, nose etc.)? Most recipes avoid to go over 10 % of caramel malt and over 5 % of roasted malt. Why should it be negative to use some more? Last question: The Pilsen style Tennen malt is very light in colour. Will the amount of Caramünch and Carafa be high enough to get the beer really dark in colour?
