Yes, I was going to note that as well. But perhaps more contentious is the comment: 'More than 90 percent of the world’s beer is bottom-fermented. With the invention of artificial refrigeration—and plenty of help from German migrants who fanned out across the globe with their favored yeast—the world chose lager. It still chooses lager.' Is it really true that more than 90% of the world's beer is bottom-fermented? Has anyone done any meaningful analysis of beer production? And shouldn't Czech brewers be given more than a little credit for the spread of bottom-fermented beer? Certainly, there are large tracts of the world where top-fermented beers dominate, the UK of course, Belgium (though mass-produced 'lager' is probably the best seller), west Africa, and probably a lot of other places. Even in Germany, many people drink top-fermented beers (kolsch, alt bier, weizen, etc.). |
