| Good plan. And if you haven't already got a glass carboy or demijohn for fermentation, I can't recommend a wide-mouthed 25 litre demijohn like the two I've gotten from http://www.hbs24.de/contents/de/d395_weithalsballon_glasballon.html highly enough. Not cheap, but they are much, much easier to clean, sanitise, and handle than regular glass carboys and demijohns. Not sure about getting them in Ireland though; these are made in Italy. German homebrewers appear to tend to ferment in plastic vessels, which are not as good as glass or stainless steel. They seem to use glass for making wine, why not also beer? Here it is in action: http://i55.tinypic.com/a1lr37.jpg I actually use my 10 gallon kettle for my primary fermentation vessel, to more closely emulate open fermentation (with the lid on!) as well as for ease of cleaning. I will say that the single biggest leap in quality I experienced in my early days was going from partial boil of concentrated wort and adding to cold water in the fermenter to full-sized boils in the 10 gallon kettle. Then the next big leap was going to doing my own mashing instead of using extracts. Sorry, I've gotten carried away again....I think your plan of starting slowly is intelligent and sensible, and will prove very rewarding! |
