Ale is top fermenting, central European lager is bottom fermenting. And no,. I don't think the dispense in Europe was similar to UK, as CO2 equipment has been in unse since late 19th century (you can find examples of that equipment in the Franconian Brewery Museum). And no, lagering is not a by-product of industrialisation, it was adapted by probably all breweries in Franconia (and quite a lot of them can hardly be called industrial). There is no way to compare the british real ale tradition to the brewing/dispense tradition in Franconia. |
