Introduction of oxygen is extremely undesirable for beer, but staling will not occur (to any noticeable degree) within an hour and refrigeration will retard that considerably. Build up of foam has more to do with the saturation of the beer with co2 and its relative viscosity, but its too technical to go into here. Poor or badly adjusted pressure will also have an effect. I am not so sure about how much oxygen is in contact with the beer given that it is in a container with a head of co2 over the liquid, but I agree that there is likely to be more oxygenation than under a total co2 system. I think, though I couldn't swear to it, that the air pressure system is disconnected after each session and I have seen kegs being put back into cold storage between sessions, but the general point about jugs is agreed. It is wrong.
