Couple more questions - Bamberg and Munich

Ok, so we've now booked the flights and we'll have 9 nights in Germany. Have booked up 6 in Bamberg in the hotel in the middle of the river; in the process of booking 2 nights in Nuremberg (well, we would be in the process if the hotel would reply...) - we only arrive there very late on the Friday night hence it made sense to stay one night, and if staying one, may as well stay two and see the place properly. Last night is in Munich, again mainly due to the fact that we're flying home from Munich as the Nuremberg return flight didn't suit. So we'll have 2 nights Nuremberg then 6 in Bamberg and 1 in Munich. Questions: 1) We'll be in Bamberg not only on my birthday but also the day before, 1 May, which is a public holiday. Does everything shut in Bamberg on a public holiday or will we still be able to find a beer?:) 2) We'll have half a day and one night in Munich. There are presumably at least one or two decent beer places in the city: which ones would people here recommend? 3) If you had a birthday in Bamberg, and it was on a Tuesday, what activities/beery things would you save for that particular day?
