Extract versus full mash

Another question that I raised with Robert Pawelczak concerned the use of malt extract, which I use in my own home brewing. Robert surprised me (and Nick when I told him) that quite a few Franken breweries outside Bamberg used malt extract bought from Weyermann from time to time. Remember, Robert knows all these guys! As Nick pointed out, this seems a bit crazy as extract is much more expensive than whole grain but I suppose that it is a trade off between time, material costs etc.

Robert also thought that their might be little difference in the taste of beers made using extract and those using whole grain. His reasoning was simple: when making extract, the maltster is really only carry out the first stage of the brewing process, i.e. the mashing, and extract is only dehydrated wort. When you think about it, using extract is pretty similar to the way that zoigl beer is made in that the brewery only produces a wort that is transported to the stube for yeast pitching and fermentation/lagering.

Of course, producing your own wort gives you greater control of the ultimate product, as the 'primary brewer' is able to control proportions of different malts and hopping regimes. However, in both Eschawo and Neuhaus, this process is often left to one of the stube owners who has more time or is thought to have more expertise. In Eschawo, Robert Sperber (Binner) actually makes the wort for a number of the others, plus the Oberpfalzhof Hotel and Weisserschwann, while in Neuhaus, H. Punzmann of Teicher either makes or helps make zoigl for one of 2 of the other stube, as well as the 'hausbrauers'. I seem to recall someone telling in the last week or so that something similar happened elsewhere but I can't remember who.

I feel much happier about my own efforts now!
