And, believe me, running a pub is real work - I know, been there, got the T-shirt! To be honest, I don't think that it is possible to really run a pub without living on the premises and devoting 100% effort to the project. That's why the Eschawo model is so attractive, because it's only 4 days every month or so but you still have to spend some more time in the brewing and maturing the beer. The one big advantage of starting a pub in Germany (over Ireland and the UK) is that you don't have to get a pub licence. On the other, health and safety regulations seem extremely strict, as we know to the cost of many good pubs. I think that Andi Ganstahller has the answer - borrow a redundant brewery and find suitable pub premises. Alternatively, you could come to an agreement with a small brewery that isn't running to full capacity. In this way, you would avoid very heavy capital investment and also the problematic health and safety regulations.
