Ah, yes, top- and bottom-cropping. I remember that now. I guess I could try top-cropping, but then a packet of Nottingham is so easy and relatively cheap....I haven't done any yeast re-useage since I stopped doing a "secondary" many, many batches ago. The Latin names would be best. There is also the issue of some who say the term "ale" really applies only to certain British sorts of cerevisiae-fermented beer, but not others. And *not* to lagered cerevisiae-fermented beers like Alt or Kölsch. |
