Ok, think that I understand now and, sorry, oxidation not oxidisation! However, from my quick scan of the net, the main cause of oxidation is heat and poor brewing practices, although there is a phenomenon known as cold oxidation but that this affects beer much less. Also that introducing oxygen to beer is only one cause of oxidation and not the most damaging. So, I guess that, even if air pressure is used (and I now understand that its use is rare even in Scotland), it seems unlikely that it will result in overdue oxidation. I'm really coming to the opinion that the concept of real ale is not that well understood. The most important element (apart from not polluting beer with externally introduced agents) is that the beer is fresh and still contains fermentable material when it arrives at the pub. It is this fermentable material that allows the secondary fermentation to take place in the pub. Serving good real ale requires a great deal of care and not simply connecting a pressure line to a keg. However, having said that, in my three years as publican (and many years as a bar man), I rarely saw beer having to be thrown away because it had gone off. As to the economics of this process, the cost of a pint, seidla, krug or whatever is not only determined by the cost of the product. I seem to recall from my days working for Courage in Bristol that only 15% of the price was product cost and that the rest was made up of overheads, plus VAT (TVA), duty, etc. That being said, even wasting a little beer is unlikely to unduly affect its price. As an aside, I have never been a member of CAMRA, though I appreciate its work. Anyone who lived through the 'keg revolution' of the 60s and 70s (long live Red Barrel) will understand that! Back to matters Franken: I understand that a number of breweries/pubs in and around Bamberg do serve their product in a natural, unfiltered way (such as Mahr's U when they don't run out!). Anyone able to provide a list or some suggestions so that this deluded real-ale freak can sample same during his forthcoming visit would be greatly appreciated. |
