I thought this would be the case with the health (which is why I added the 'perhaps') but guessed that the malt extract might produce something more tasty, particulary for a dark beer. I know that commercial brewers in the UK add sugar but I was always attracted to Butcombe's, who made a point of saying 'without sugar'. Wow, wish I'd have known about the dangers of DME before but, anyway, didn't add boiling water - what happens if you do? Gunter Zimmermann (Zum Post) told me that Eschawo brewers use 50/50 Munchen/Piltzen malt (100% Pilzen in Neuhaus, thus difference between the darker and lighter coloured and 'tasting' zoigls) and I certainly didn't see any malt extracts being added, but I wasn't present for the whole process. What do you mean about the temperature controls Don? Is this for the brewing or lagering or for both? The Eschawo process seems a bit crude at first glance, with its wood fired boiler and dinky little tanker but it's probably quite sophisticated and they have been doing it for rather a long time. Anton Heinl told me that he maintains the zoigl in his lagering tank at between 2 and 4 degrees, so even his equipment must be quite sophisticated and he's the smallest brewer.
