Hopping Mad

Using dried malt extract (DME) vs sugar isn't really a matter of concern as far as health matters go, as sugar ferments pretty thoroughly. It's more a matter of making something that actually resembles a beer tasting of malt. Excessive sugar use can lead to a dryish, cidery drink, but if the sugar ferments out thoroughly with little residual left behind - in other words, if the resulting beverage is highly attenuated - this is actually a better result. In terms of managing type 2 diabetes, highly attenuated beers are better in terms of health matters, if less satisfying to the palate, depending of course on the OG and FG. I do hope you exercise all due caution when using DME. The results of adding DME to very hot (boiling) water are often not pretty, and can even be dangerous. Making an U-style or "Zoigl" style beer means having the temperature-control tools necessary for making lager, along with appropriate malts (usually pale and Munich) and lager yeast(s). It's also highly unlikely that Franconian and Oberpfälzisch brewers use malt extracts, although there is no rule against it; certainly, German brewers use the likes of Weyermann's Sinamar malt extract, as it's a barley-malt based coloring agent and thus "legal." Some smaller German brewpubs used malt extract when starting up, but when making beers commercially, malt extract is an expensive way to go, compared to using bulk quantities of barley malts.
