I think an answer to this may be that when they cold condition the beer in tanks,or"lager" it. they have valves on the tanks that will hold the beer at the desired level of carbonation,and of course,being stored at close to freezing most of the co2 created by the yeast(and the strains they use continue working at very low temperatures)stays suspended in the beer.so when it is put into the casks at very low temperatures,and then moved to the area for serving at a higher temperature.the co 2 comes out of suspension thus creating a level of natural carbonation in the glass/krug. as for the chalk and cheese argument re British and German beer cant see the point. as a member of CAMRA and a professional brewer,I believe the original argument should not have been so much about co2 in beer,rather about pasteurization.which imho,is the real enemy of beer. |
