| It's funny all you guys like Jaegerschnitzel and other kinds of hyphenated Schnitzel(s) like Paprika-Schnitzel and so on. At the least there is to say that this is not a traditional Franconian food, but rather canteen food, and many older people (like me) regard it as fast-food. Remembering my childhood in the nineteen-fifties, traditional Franconian sunday meal at home is braised meat with two or three side dishes. The same at restaurants which served "Buergerliche Kueche" (don't know how to translate, but it refers to an average Gasthaus, as Hartmann in Wuergau was in the past). Then in the sixties not only came the dying of breweries, but also the decline in Franconian Gasthaus food. Traditional food was replaced by "Internationale Küche", i.e. more than half a dozen sorts of braised meat were replaced by an equal number of hyphenated Schnitzel(s), and dumplings and all kinds of concocted potatoes like Bratkartoffeln and so on were replaced by french fries. Yes, it was and is a decay. Now to the crumplings. Today, you can produce them from a pre-made paste out of a supermarket or even make instant-crumplings from some shady crumpling powder. As some of you already have noted, these white or greyish golf-balls are not good at all. Traditional Franconian crumplings have to be freshly made either from raw potatoes or from soft boiled potatoes or half-and-half, and typically are yellow or yellowish and have the figure of a tennis-ball. Since I like Bratkartoffeln even more than crumplings, and doing home-made crumplings is hard work, I'm not able to give you a recipe. Nor can I truly recommend a Gasthaus which serves good crumplings. But may be Hartmann, which nowadays is above average, is worth of a try, if you want to discover real Franconian crumplings.
