Congratulations! Let me guess: you're brewing a Guinness clone? AFA using hops goes, I swear by whole leaf hops, and eschew pellets, as the processing into pellets (chopping, smashing) can negatively affect the flavour and aroma characteristics. Use 2 - 3 times what the recipe calls for as well. Learning about varieties...Don's suggestions are good. When you get some practical experience with different varieties, you might be surprised to learn how some of the more "bizarre" new ones that smell of grapefruit and what-not are descended from rather more basic noble varieties. Seems unlikely, but there it is. And the "five C's" from Oregon and Washington are the best, of course: Cascade, Centennial, Chinook, Columbus (AKA Zeus) and especially Citra!
