These bits of terminology get confusing IMO. As a Yank, "on tap/draught/draft" usually means "CO2 keg" dispense to me. Am I alone among Yanks in this regard? We seem to no longer associate "drawing" the beer (draught) with hand-pumping or gravity pour, rather with CO2 "drawing" the beer out. You (Barry) say "draught" means "cask-conditioned" and assumedly manually drawn from the cask, ergo NOT CO2 keg. You would say that beer is "on tap" at Klosterbräu, but "on draught" at Schlenkerla, right? Is this standard among Britons? When I'm in England, I usually hear people talk about "keg" or "on cask" to distinguish. Similarly, IME, "vom Fass" means "CO2 keg", whereas "vom Holzfass" means "wooden cask" like at Schlenkerla. People don't seem to make as much of a distinction between CO2 keg and bayerischem Anstich when they talk about how a beer is dispensed here except when it's in a Holzfass...at least in my experience. I often have to ask if someone specifically means CO2 dispense or not when they say "vom Fass". How can we make this more easily clear, or do we need to? In case the difference isn't clear to Germans: In beer parlance, a "keg" is a Fass from which beer is dispensed by CO2 pressure. A "cask" is a Fass from which beer is drawn by hand pump ("beer engine") or by gravity (bayerischem Anstich). "Cask-conditioned" means ale (obergäriges) that goes through secondary fermentation in a cask, so that the ale is in an especially fresh form when it is drunk, with yeast settled on the bottom of the cask. This is similar to an ale version of ungespundetes Lagerbier, perhaps, but the Lagerbier goes through a long secondary fermentation in a lager tank before being filled into gravity-pour Fässer. |
